Samantha Claassen owns Golden West Cafe, in Baltimore Md. She is a co-founder of MD Vegan Eats, the nation’s first Vegan Restaurant Week. Sam believes that each plant-based meal sold in omni-restaurants will help to change the industry from within, that we are powerful great and small. She has been plant-based for some years and spends time advocating for traditional restaurants to provide more inclusive menu options.
